Gideon’s Bakehouse in Disney Springs is known for its incredibly delicious cookies, large cake slices, fun cold brew flavors, and whimsical décor. It’s also often known for very long lines at its Disney Springs location. We walked up on a magically slow weekday morning and headed in for limited-time cookies with no line.

Not only did we expect no wait, but we had what may have been the best cookie we’ve ever had from Gideon’s. Here’s the bad news. It’s only available for the month of July… so run to Disney Springs if you can! Without any more teasers, here it is… the Lemon Poppy Crumb Cookie!

The cookie is super soft with lemon, poppy seeds, and chunks of white chocolate and topped with lemon butter crumbs and sugar glaze for $6.50. The lemon combined with the white chocolate is the perfect pairing of fresh and sweet. It’s also one of the softest cookies I’ve ever had from Gideon’s and makes it dangerously easy to scarf down.

This cookie was so delicious that I plan on going back this month to stock up on more!

There is another limited-time cookie available – the Orange Pecan Chocolate Chip also for $6.50. This vanilla bean chocolate chip cookie is infused with orange, dark chocolate, South Florida pecan pralines, and candied orange peel.

While this was a great cookie, in paled in comparison to the Lemon Poppy Crumb. The candied orange was a nice surprise, but the combination of dark chocolate, orange, and pecans was almost too much. It also was nowhere near as soft as the lemon cookie.

If you’ve never been to Gideon’s, you must order the Original Peanut Butter Cold Brew for $6. The cold brew is a dark blend infused with peanuts and topped with sweetened maple syrup and oat milk. Even if you’re not a coffee drinker, this is a Disney Springs favorite.

During our outing to Gideon’s we also notice loads of new merchandise to show off your love of Gideon’s year-round.

This month’s featured characters are Bartholomew the Skunk Ape and Stuart Valencia, who are featured in several merchandise items like shirts, pins, and candles. There are also still some items from Halfway to Halloween, Halfway to the Holidays, and Pride.

There are a few 24 ounce tumbler designs available near the checkout for $39.

And if you want your home to smell like Gideon’s (of course you do!), there are 5 unique candles, each for $31. We were all surprised at how much each one smelled like Gideon’s and our favorite cookies.
